Aromas are nuances of citrus fruits (grapefruit, lemon), exotic fruits (mango and litchi), floral notes (white flowers and shrub broom), greener notes (blackcurrant leaf, asparagus), spices (liquorice), and mineral (smoky, flint). It wakes up the taste buds, allowing the perception of spiciness on the tip of the tongue. The second impression shows the suppleness and volume of the wines from the ‘stony’ vineyards, blending nicely with the mineral vivacity of the wines from the flint soils.
The domaine’s vines are planted in some of the finest Sancerre terroirs: Les Monts Damnés, les Cous de Brault, le Chêne Marchand, in total about 30 south and southeast-facing plots, the heritage of a long line of wine growers. The "Domaine de Saint-Pierre" wine is created from a blend of all these terroirs.
Tasting notes: A white wine with white and citrus fruit aromas. On entry, the wine is a combination of liveliness and richness and shows lovely structure on the mid-palate. The finish leaves an impression of freshness and a saline note that adds finesse and length.
A Sancerre with unctuous fruit pierced by a shining ray of zippy citrus, with a chalky terroir note somewhere in the mix. Pale gold color. On the nose, beautiful aromatic expression with connotations of ripe fruit and white flowers, with great persistence and elegance on the palate. A fine balance between freshness, suppleness, minerality and fruitiness.

The Clos du Roc stems from the famous and ancient Saint-Satur Abbaye circa 1450. Located on a steep south facing flinty hill, it is one of the most beautiful plots of the Sancerre appellation. The vines get the maximum sunlight and grow sheltered from the cold winds, protected by the forest ‘Bois de Charne’ located just above the vineyard.
The ‘Silex’ terroir produces the most sought-after Sancerre thanks to their elegance and their intense minerality. Located alongside the Loire river, it is a very ‘early-ripening’ soil. The flint stones accumulate heat from the sun during the day and radiate at night which accelerate the maturity of the grapes.
This rare bottling comes from just 0.40 hectares of 70-year-old vines in the Comtesse lieu-dit at the chalky epicentre of Les Monts-Damnés. For hundreds of years or more, this vineyard has been considered by locals to be the finest single terroir of Chavignol. The soil composition is pure Kimmeridgian limestone and consists of a miserly 30 to 40cm layer of topsoil over solid limestone bedrock. This brings intense minerality and also warmth, as the rocky soil absorbs the heat of the sun and irradiates back at night. Therefore, it’s a site that always produces fully ripe fruit, together with intense freshness—hence the historical fame.
"The Boulay family have nine hectares in the famed Sancerre village of Chavignol, and can trace their history as grape growers in the village back to 1380. Their vineyards are planted in Kimmeridgian-centric soils, including the famed “crus” of Monts Damnés, La Grande Côte, and Clos de Beaujeu. They have been farming organically since 1990 and harvest everything by hand. Their top wines, aged in a mix of tank and neutral 300L barrels, can age easily for over 20 years, earning Boulay a reputation as a go-to for quality and longevity in a village of Sancerre’s most celebrated vineyards and domaines."
