Saperavi Premium is like Saperavi’s older brother. More refined, tannic, and most likely studied abroad. The bottle of exploration. The aromas and flavors transform and deepen with each sip. A thought-provoking wine, Saperavi Premium grapes are green harvested in early summer. This means the small, unripe grapes are removed by hand, allowing the vine to put all its energy into the juicy remaining grapes resulting in an adventure for the palette. This wine has a long finish and is aged in French oak barrels for four to six months.

Salome is our flagship wine, and it acts like one. An exotic full-bodied and complex bio-dynamic wine, Salome is made from tenderly hand-cultivated Saperavi grapes and features a long, lingering finish. Salome shares similar traits found in sophisticated California reds but, with its own unique characteristics, it marries western winemaking with Georgian earth and grapes.
Pure, with extremely low sulfites, Salome with its dark pomegranate color is fermented in oak casks and aged in French oak barrels. Rich and opulent on the palate, and framed by a solid tannic structure with soft, curvy oak tones, Salome features hints of tobacco leaf and dark fruits. An everlasting romance in a glass.
Sauvignon Blanc Domaine Chavet Menetou Salon La Cote
This Menetou-Salon from Domaine Chavet is light yellow in color. In smell and taste aromas of citrus, nectarine, peach and flowers. Delicious as an aperitif, with fish, quiches but of course also with goat's cheese.
The Chavet family has been making wine since the 17th century. In the heart of Menetou-Salon, between Sologne and Sancerre, they manage 23 hectares of vineyards. The sauvignon blanc and pinot noir grapes grow here on Kimmeridgian soil; a limestone soil with centuries-old fossil deposits. The Sauvignon Blanc grape originally comes from the Loire and thrives here. After alcoholic fermentation in stainless steel tanks, the wine is bottled young and marketed.

Clean winemaking, extended skin contact and slow, cold fermentation in stainless, it is the culmination of a decade of collaboration with our grower, mentor and co-winemaker, Eckehart Groehl.
