Cousins Regis and Sylvain only started this small negociant project in 2017 yet they are already receiving acclaim for their unique bottlings. This is a classic Loire Valley white with plenty of vitality and personality. A very clean bouquet of oyster shell with hints of chopped herbs and apricot. The medium bodied palate follows through with more of that briny sea breeze quality (no doubt why the fish image was used for the striking label) layered with mouth-coating exotic fruit. Fermented with ambient yeast in a combination of concrete and steel tanks to allow the varietal to speak for itself. Bottled unfined and unfiltered with minimal sulfur.
