Burgundy wines have built their reputation throughout the twentieth century on two main grape varieties: for red wines, Pinot Noir: an extremely demanding grape variety, requiring careful viticulture, controlled yields and specialized vinification. At its best, it succeeds in combining finesse, perfume, power and grace. In white, the Chardonnay grape variety, a veritable sponge to the terroir, manages to transcribe the clay-limestone terroirs of Burgundy with great emotion. The soils with a predominantly limestone content are dedicated to the cultivation of this grape variety, which from limestone draws notes of lemon, citrus and stone, which clay, often present, densifies and comforts in the mouth. Burgundy reds are also marked by winemaking styles: the barrels bring a touch of vanilla and greediness that the grape variety does not have. In addition, the entire harvest marks the wines with exceptional floral aromas.
