Harvest
Grapes harvested by hand and destemmed between 3 and 22 September 2021. Note therefore the difference of no less than 20 days in the ripening times of the various vineyards, due to the age of the vines, exposure and altitude.
Vinification | Refinement
After harvesting, the Sauvignon grapes are macerated for about 18/20 hours at a temperature of 10*/12° C in special containers, protected from oxygen with innovative systems by recycling their own fermentation carbon, in order to reduce the supply of antioxidants. The must ferments and ages on the lees for 6 months, partly in large 20/27 HL wooden barrels and partly in steel containers.
Bottling
The wine is then blended and bottled at full moons between March and July 2022.
